Pingyao noodles

Ho provato a ricreare a casa i fantastici noodles che ho mangiato a Pingyao. Visto che sono un po'ingrassata, ho usato gli spaghetti shirataki che sono ipocalorici, ma l'ideale sarebbero delle belle tagliatelle spesse, meglio di grano.
E' un piatto freddo leggero e ideale per l'estate.

INGREDIENTI per 2 persone:
- 200g di noodles
- due cucchiai di olio al peperoncino (meglio asiatico)
- un cucchiaio di aceto (io ho usato il mirin che avevo in casa, probabilmente anche aceto bianco qualunque va bene)
- due cucchiai di soia
- un cetriolo
- peperoncino secco a piacere

Dovendo fare a meno del tipico aceto nero della regione, ho provato a creare un sapore simile mischiando soia e mirin. Ho aggiunto l'olio al peperoncino e ho lasciato riposare la salsa mentre tagliavo il cetriolo a julienne.
Ho cotto i noodles e li ho passati sotto l'acqua fredda per raffreddarli. Li ho scolati bene e li ho mescolati alla salsa e al cetriolo.
Volendo si possono aggiungere come guarnizione fiocchi di peperoncino sbriciolato come nel piatto originale.

I tried to recreate at home the fantastic noodles I ate in Pingyao. Since I put on some weight, I used low-calorie shirataki noodles, but the ideal would be nice thick wheat noodles.
It is a light cold dish ideal for summer.

INGREDIENTS for 2 people:
- 200g of noodles
- two tablespoons of chili oil (best asian)
- a spoonful of vinegar (I used the mirin I had at home, probably white vinegar would be ok too)
- two tablespoons of soy sauce
- a cucumber
- dried chili to taste

Not having the typical black vinegar of the region, I tried to create a similar flavor by mixing soy and mirin. I added the chili oil and I let the sauce rest while cutting the cucumber julienne style.
I cooked the noodles and passed them under cold water to cool them. I drained them well and mixed them with the sauce and the cucumber.
If you like you can add crumpled dried chili pepper as a garnish as in the original dish,
